Wash the rice and leave it for some time in water.Drain the water and keep the rice aside.Fry the onions in oil and keep it aside.Then mix all the spices and vegetables in the same oil and cook for a minute.Add the rice and fry as long as the grains are seperated.Put salt,chilli powder,turmeric and water.When the rice is 3/4 cooked,add the saffron and stir.Sprinkle the kewra essence and add the cut pieces of cashewnuts,almonds and raisins.Garnish it with fried onions,fresh mint and corriander leaves.Serve hot with curd.

Wash the rice and leave it for some time in water. Saute the onions and garlic in hot fat till brown.Then add spices,salt,ginger,green chilli,cumin seeds and saute again. Cook the rice in water till tender. Divide the rice in three equal portions.To the first portion add boiled peas,green colour and corriander leaves and mix it.To the second portion add boiled peas,green colour,corriander leaves and mix it.To the third portion add red colour,tomatoes and mix it.Add the egg white or brown cheese pieces to the third portion. Heap up the three piles in a dish and garnish it with cashewnuts. |
