Vegetable Biryani
  (6 Portions)

Aeroplane Basmati Rice
2 cups
Onions
2 - cut small
Refined Oil
50 gms
Cinammon
1 piece
Cardamom

Carrots
1/2 cup
Cauliflower
1/2 cup
Potatoes
1 cup (diced)
Spanish Pepper Powder
1 tsp
Turmeric
1 tsp

to taste
Cashewnuts
20 gms
Raisins
20 gms
Almonds
20 gms
Saffron
1/2 tsp (mixed in one tsp milk)
Kewra essence
some drops
Water
3 and 1/2 cups
Coriander leaves

Mint Leaves

Wash the rice and leave it  for some time in water.Drain the water and keep the rice aside.Fry the onions in oil and keep it aside.Then mix all the spices and vegetables in the same oil and cook for a minute.Add the rice and fry as long as the grains are seperated.Put salt,chilli powder,turmeric and water.When the rice is 3/4 cooked,add the saffron and stir.Sprinkle the kewra essence and add the cut pieces of cashewnuts,almonds and raisins.Garnish it with fried onions,fresh mint and corriander leaves.Serve hot with curd.

Navrattan Pulao  (4 Portions)

Aeroplane Basmati Rice
250 gms
Refined Oil
60 gms
Cinammon
1 piece
Cloves

Cumin seeds
1/2 tsp
Pepper Seeds

Onions
60 gms cut into small pieces
Ginger
15 gms
Garlic
6 cloves
Green chillies
2 finely chopped
Peas
60 gms (cooked / boiled)
Tomatoes
60 gms
Coriander leaves
few
Egg white
60 gms cooked and chopped / minced
Red colour
4 drops in 1 tsp water
Green colour
6 drops in 1 tsp water
Salt
to taste
Water
450 ml

Wash the rice and leave it  for some time in water. Saute the onions and garlic in hot fat till brown.Then add spices,salt,ginger,green chilli,cumin seeds and saute again. Cook the rice in water till tender. Divide the rice in  three equal portions.To the first portion add boiled peas,green colour and corriander leaves and mix it.To the second portion add boiled peas,green colour,corriander leaves and mix it.To the third portion add red colour,tomatoes and mix it.Add the egg white or brown cheese pieces to the third portion. Heap up the three piles in a dish and garnish it with cashewnuts.
